Glendalough Wild Botanical Gin
To make this extraordinary gin, Glendalough forages wild plants in the mountains around the distillery. What they pick goes fresh into the still within hours of foraging.
All the plants are sustainably picked by a full time forager, every day they distil. They take a lot of care that they don’t adversely affect the areas they find them in. That means sometimes using scissors rather than picking to make sure roots aren’t pulled, or maybe skipping a few before picking the next one, or finding different patches of the same plant, to make sure an area isn’t over-foraged.
The Glendalough Distillery was set up by five friends from Wicklow and Dublin with a deep passion for reviving the heritage of craft distilling in Ireland. The idea behind Glendalough Distillery is to make innovative spirits while staying true to the tradition and heritage of our ancestors. Initially they started with the first ever spirit, poitín and since then have moved to whiskey and most recently the release of our seasonal, wild botanical gins.
