During harvest, all grapes are processed as. whole bunches go straight into the vertical basket press without additives or temperature control. The juice then goes straight into stainless steel, where it ferments naturally. Long lees ageing to enhance complexity. Bottled unfined, unfiltered with a pinch of sulphur.
